Our inaugural exploration of the Aperitif & Digestif categories of spirits & fortified wine
Launched in December 2019, Pietro Nicola Nocino is the inaugural bottling from our range of Aperitivi & Digestivo that takes cues from the roots of our founder but is predominantly inspired by the drinking culture of Italy.
Nowadays Nocino is most commonly associated with and consumed in Italy as a digestif, however it is actually believed to have origins in the northern and eastern parts of what is now Scotland with the earliest records linked to the Pictish people, who consumed it as a restorative tonic, for its perceived medicinal qualities, and as a digestive aid.
Nocino (pronounced no-CHEEN-oh) is an aromatic, spiced and bittersweet Walnut Liqueur produced using unripe Green Walnuts that have been macerated in alcohol for forty days, and seasoned with an array of natural botanicals. Our green walnuts were sourced from Potash Farm in England and are picked in a short window between 1st and 25th July, in turn creating a seasonal offering that will comprise no more than 800 bottles in 2019 with larger batches expected in succeeding years.
We believe it is best enjoyed neat, over ice, or in variants of Cocktails, Highballs, Flips and Liqueur Coffees, though we do always suggest you share it with your nearest and dearest.

Nose: Aromatic spice, roasted cacao & coffee, walnut, and hints of clove
Taste: Sticky mouthfeel, bittersweet, baking spices, and melted chocolate balanced with creamy walnut
Finish: Bittersweet, rich, and everlasting with intense nuttiness
Sherries, amari, fortified wine, Boker’s Bitters, Aphrodite Bitters, Brazilian Bitters, Winter Spiced Bitters, cider, bourbon, rye whiskey, Cognac, aged rum, apple brandy, ginger ale, ginger beer, cream, honey, apricot, banana, hot chocolate, liqueur coffees…
- 45ml / 1.5oz Rye Whiskey
- 15ml / 0.5oz Pietro Nicola Nocino
- 15ml / 0.5oz Sweet Vermouth
- 3 Dashes Dr. Adam Elmegirab’s Orinoco Aromatic Bitters
Add all ingredients to mixing glass, fill with cubed ice and stir for 15-20 seconds. Strain into a chilled cocktail glass and garnish with a snap of fresh orange zest
